Steps we take to make Avakaya Mango Pickle | Avakai Mango Pickle

Step 1

For making traditional Andhra Avakaya, we source Raw Naati Mangoes(Kairi) from local farmers. Along with this other high quality materials like mustard seeds, red chilli powder, and other spices are sourced.

Step 2

The mangoes are washed and uniformly chopped by our didis, then the mango pieces and crushed garlic are soaked in salt and turmeric separately.

Step 3

The mango pieces and whole garlic cloves are gently mixed with the prepared spice-infused oil, ensuring every piece is well-coated. Proper mixing is ensured by our didis for an even distribution of flavors and to initiate the pickling process.

Step 4

The pickle is transferred into clean, dry, airtight glass jars. The jars are sealed tightly and left undisturbed for 14 days, allowing the mangoes to absorb the spices and ferment naturally. Sun exposure during this period makes the Avakaya pickle( Avakai pachadi) rich, tangy, and ready to enjoy!

It's quite tasty. Spice is on point but I feel the tanginess of the mangoes is overpowered. Should be a bit more tangier.
