How to make khatta meetha nimbu ka achar at home
Ingredients (about 1 jar):
- 12 yellow lemons (about 500 g)
- 3 tablespoons salt
- 1 cup sugar or jaggery (about 200 g)
- 1 teaspoon red chilli powder
- 1 teaspoon roasted cumin powder
- ½ teaspoon black salt
- ½ teaspoon black pepper powder
Method:
- Wash the lemons and dry them completely with a cloth. Even a little moisture can spoil the pickle.
- Cut each lemon into 8 pieces and remove the seeds.
- Mix the pieces with salt and fill them into a clean, dry glass jar.
- Keep the jar in the sun for 7–10 days, shaking it once a day, until the peels turn soft.
- Add the sugar or jaggery and all the spices, and mix well.
- Keep the jar in the sun for another 7–10 days, until the sugar melts into a thick syrup.
- Always use a dry spoon, and keep the jar closed.
