Maharashtrian Green Chilli Pickle Masala





You Will Need
Green Chillies - 250 gm
Salt - 2 tbsp (Note: If you are using pink salt, take 3 tbsp instead)
Mustard Oil - 100gm
Lemon Juice - 2 tbsp
FarmDidi Masala - 60g (entire packet)
Clean Jar - 1kg capacity (approx)
Steps
Wash the chillies and dry them in the shade.
Slice the chillies / cut as per your requirement. Let them dry again.
In a container, mix the FarmDidi masala, 2 tbsp of oil, salt, and lemon juice.
Fill the sliced chillies with the prepared masala mixture or add the prepared masala to the cut chillies.
Heat mustard oil till you see oil fumes, then let it cool until it's lukewarm.
Gently stir the masala-filled chillies into the lukewarm oil.
Transfer the chillies into a clean, dry jar. Pour the remaining oil and masala over them.
Keep the jar in indirect sunlight for at least 4 days. Make sure the jar is tightly closed with the lid.
