This pickle is made using dark green chillies that are sourced from local farmers. The chillies(athana mirchi) are cut into pieces and salted to better absorb the flavour. Mustard oil is heated, and a mix of premium spices, including fennel seeds and coriander powder, is sauteed for a few minutes to enhance the flavour profile. The chillies (athana mirchi) are then added and mixed to ensure absorption of flavour, balancing heat and spice.
This green chilli pickle (hari mirch achar) is stored in clean and dry barnis for 5-7 days for natural maturation, over this time the green chilli pickle develops a bold, dry and spicy flavour, making it a perfect side dish for your food.
